“Süssreserve” is a German term (loosely meaning Sweet Reserve) and used to refer to unfermented grape juice that is used to sweeten a wine AFTER fermentation to soften acidic notes.
With adding the süssreserve, we not only raised the sugar level of the wine slightly, but it balanced the acidic notes to make the wine rounder and softer. It also lowered the amount of alcohol. We held back 100L of Unfermented La Crescent Juice after Production on October 12th 2022. We stored it in our cooler at 3’c to inhibit any fermentation. Light sulphuring was also done over the span of 7 Months to ensure the fermentation didn’t happen. By walking the 224 steps from the cooler to the Winery Production Area with the pails of super sweet and succulent unfermented Juice, we added 24L (roughly 8%) to the fermented La Crescent in a separate stainless tank. This resulted in a “Dry” and “Sweetened” version.
By enjoying the La Crescent and the La Crescent Süssreserve side by side – you can truly appreciate the great qualities in the “Dry Version (0.9G/L : RS) and in the “Sweetened Version” (12G /L : RS)
